Our Chef Chef Chris Cornhill, born and raised in Edinburgh, Scotland, began his culinary career at an early age at the Gilsland, his family’s traditional Scottish hotel. At the age of eight he convinced his father, a classically trained Chef, to let him sell toasted sandwiches to their lounge patrons, and his love of creating delicious ‘comfort food’ was born. Upon finishing school, Chris trained in Hospitality Management and worked in several locations around Edinburgh including a large intercontinental hotel and one of the UKs top 3 tourist attractions, where he focused on honing his ‘front of house’ skills. Change came in 2004 when he relocated with his wife to Canada, and the opportunity arose in 2005 for him to help open the Castle as a distinctive Inn and Restaurant. Now able to focus on the food he loves, Chris has acquired his largely self-taught skills through the independent study of both classic European culinary methods and the latest modern cooking techniques and has achieved his Red Seal Chef Certification. His style features classic French and British roots with an emphasis on the finest local ingredients, creating a truly memorable dining experience that makes the Castle Inn ‘New Brunswick’s Best Kept Secret’.
